Summer at Clifftop: Our New Roaster, What We've Learned, and Where We're Headed
Hey coffee friends,
We've had a busy summer in our new unit.
Nick joined the team in April, roughly the same time we bought our new coffee roaster, the Diedrich IR12. Six months have flown by, and we've learnt a lot along the way. But we're proud of what we've achieved—we think our coffee is more consistent and tastier than ever before.
Our Roasting Philosophy: Light, Soluble, and Easy to Brew
Our approach to roasting is simple: showcase the coffee's natural characteristics while making life easy for you, our customer.
What does that mean in practice?
Coffee roasted light. But also soluble and easy to make a good brew.
It's all about balance.
We could roast darker and heavier. We could roast so light that the beans crack under their own weight. But we've chosen the middle ground—the place where you get the origin character (the jasmine notes from Ethiopia, the berry brightness from Rwanda) without fighting your brewer.
That balance is what makes the difference between coffee that tastes incredible and coffee that tastes like a science experiment gone wrong.

Working collaboratively with someone else has been a lot of fun.
Since Nick started, we've sampled around 100 different coffees. We've tested roast curves. We've compared timing. We've tasted the same origin roasted five different ways. It's been intense, honest, and genuinely exciting.
The culmination of that work is the 10 coffees we now have on our current menu.
We're pretty evenly spread with African and South American coffees. We're buying in small volumes to increase turnover and keep offering fresh coffees for you to discover. This means your bag is always roasted fresh, never sitting around waiting for someone to order it.
